Just a quickie post today, checkin' in with the latest Sunday brunch creation - a vegan breakfast pizza!
Pizza is a really easy thing to throw together if you've got an hour or so to let the dough rise. I used this recipe, using regular all-purpose flour instead of bread flour and allowing it to rise a little longer, about 45 minutes. I also used a lot more than the 2 cups the recipe called for - at least 2 1/2 cups, maybe more. When you're making dough, it's all about feel - pizza dough should be soft and a little tacky, and you want to avoid adding too much flour.
For the toppings, we dressed this pizza in a white sauce - well, it's more of a yellow translucent color but still. We heated 2 or 3 tablespoons of olive oil in a small pot and cooked some garlic, onion and fresh poultry herbs in it, and spread that on the base of 2 pizzas (the dough makes enough for 2 10-inch pizzas). On top of that went some scrambled tofu, Italian-style ground round (vegan sausages would be a great choice too), sauteed mushrooms and bell pepper, sliced tomatoes and some Daiya (or whatever vegan cheese you fancy). We baked it on a pizza stone for about 10 minutes at 450 F - I like the results of cooking pizza at high temperatures, since it gives the dough a crisp-on-the-outside, soft-on-the-inside texture.
Though it was awesome on its own, my favorite way to eat anything breakfast-y tends to be with ketchup. Mike ate his with hot sauce if you're not into ketchup-y goodness. And the best part? 2 pizzas meant leftovers for lunch!

DeleteI'm liking this breakfast pizza, it sounds mighty tasty. You guys should start making breakfast items of all foods! Tacos, pie, empanadas, the possibilities are endless.

That sounds amazing! Luckily there are many more brunches in my future. :) And I will tell you two things. Yes, you are warm. However, prior to this we had made plans to move to Ontario next summer, and that still stands. Nonetheless, still warm. :)
